Ingredients
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tbs honey
- 2 tsp garlic, minced
- 1 tsp dried thyme
- 1/2 tsp kosher salt
- 1/2 tsp crushed red pepper flakes
- 2 tbs olive oil
- 4 boneless chicken breas halves
- 1 can (13.75 oz.) whole artichoke hearts, drained
- 1 lemon, thinly sliced
- Cooked orzo
- Chopped fresh parsley

Preparation
Step 1
Combine the oil, lemon juice, honey, garlic, thyme, salt, and pepper flakes in a small bowl for the dressing.
Season chicken breasts with salt and black pepper. Saute in 2 T. oil in a lal"ge saute pan coated with nonstick cooking spray. Cook over medium-high heat until lightly browned on both sides, 3-5 minutes per side, Reduce heat to medium, cover, and cook 5 minutes. Add artichokes and dressing. Simmer and reduce about 3 minutes.
Top chicken with slices of lemon; cook 2 minutes, or until dressing thickens, Serve over cooked orzo. Garnish with chopped fresh parsley.
