Ingredients

  • Sauce:
  • 1-11/2 lbs. small potatoes, unpeeled & cut in half
  • 1-2 Tbs. olive oil
  • 1 fresh poblano pepper, seeded & chopped
  • 1/2 c. cilantro leaves
  • 1 c. baby spinach leaves
  • 3 garlic cloves (3/4 tsp. minced garlic)
  • 1/4 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/4-1/2 c. butter, melted

Preparation

Step 1

Steam or boil potatoes until fork tender. Combine sauce ingredients & puree in blender or food processor. Place potatoes in large skillet, after steaming or boiling them, with olive oil & heat over medium heat. Brown them evenly, remove from heat & place in serving dish. Add sauce, stir to coat & serve.
