Ingredients
- 4 tbs bacon drippings or shortening
- 4 cups peeled, cubed potatoes
- 1 cup minced onion
- 1/2 tsp pepper
- 2 cups half and half
- 1 cup grated carrots
- 1 bay leaf
- 1/2 cup chopped parsley
- 1 1/2 tsp salt
- 5 cups chicken stok
- 4 tbs flour

Preparation
Step 1
Melt shortening and saute potatoes, parsley, onion, 1 bay leaf, salt and pepper over medium heat. Then cook, covered for 15 - 20 minutes over low heat. Add chicken stock and cook for 15 minutes. Mix half & half with flour and stir into soup. Keep stirring so no lumps form. simmer soup for at least 30 minutes. Put grated carrots in and cook 5 minutes more. Serve.
