Ingredients

  • 2 lbs beef stew meat cut into 1 inch pieces
  • 1 tbs vegetable oil
  • 5 cups
  • water
  • 4 celery ribs, chopped
  • 4 carrots, chopped
  • 1 large onion, chopped
  • 1 (14 oz can) diced tomatoes
  • 2 tb tomato paste
  • 4 tsp beef bouillon
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp basil
  • 1 tsp parsley flakes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup barley

Preparation

Step 1

In a large pot, brown meat in oil then drain. Add rest of ingredients EXCEPT BARLEY. Bring to a boil, reduce heat, cover and simmer for 50 minutes. Stir in barley and simmer another 30 minutes or until barley is tender.
