Ingredients

  • 16 oz. frozen petite peas
  • 1 head ice burg lettuce
  • 1 pkg. top ramen noodles (discard seasoning)
  • 3/4 cup salted whole peanuts
  • Dressing (Make ahead and refrigerate).
  • 1 cup+ mayo
  • 1 bunch chopped green onion
  • 3-4 cloves garlic, finely chopped
  • 1 can water chestnuts, coarsely chopped
  • 1/2 tsp sesame oil
  • 1/2 tsp powdered ginger
  • 1/2 tsp dry mustard

Preparation

Step 1

Parboil peas 3 minutes. Drain well.
Shred Lettuce (I cut in thin slices with serrated knife).
Break ramen noodles into fine pieces (in unopened bag).
Mix lettuce and peas in large bowl. Shortly before serving,
toss with dressing, peanuts and ramen noodles.
