HAM WITH CRANBERRY, POMEGRANATE & PORT WINE GLAZE

Ingredients
- 4-6 kg smoked ham
- 1 1/4 Cups Fresh or Frozen Cranberries
- 1 3/4 Cups White Sugar
- 1/2 Cup Water
- 1 tsp. Ground Cinnamon
- 1/2 tsp. Ground Cloves
- 1/4 Cup Port Wine
- 1/4 Cup Pomegranate Juice

Step 1
Glaze (Yield: 2 cups):
Place the Cranberries, Sugar, Water, Cinnamon and Cloves into a pot. Cook over medium high heat for about 20 minutes, until the cranberries are very soft, and the glace has thickened. Add the Port wine, remove from heat and add the pomegranate juice.
Ham:
Preheat the oven to 350 degrees F. Place your smoked ham into a roasting pan. Using a sharp knife, slit the ham across the surface, and then slit perpendicular to the first slits. This will make the ham have a "diamond-like" decoration after cooking. Be careful, the knife should not go very deep into the flesh, try to just "pierce" the outside of the ham.
Using a pastry brush, brush the cooled glace all over the ham. Place the ham into the oven for about 20 - 25 minutes. Remove from the oven and re-glace the ham again.
Cook the ham for about another 10-15 minutes, until the internal temperature is over 150 degrees F (60 degrees C). Remove the ham from the oven. Place the ham onto a cutting board, and slice as needed. Pour a small amount of the glace over the cut ham and serve.
