Ingredients
- 3/4 cup buttermilk
- 3 pounds cut-up chicken, skinned and trimmed of all visible fat
- 3/4 cup cornflakes, crushed
- 2 teaspoons paprika
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/8 teaspoon ground cayenne pepper

Step 1
Heat oven to 400 degrees. Cover shallow metal baking pan with foil and coat with cooking spray. Pour buttermilk into shallow bowl. Add chicken; turn to coat. Refrigerate at least 15 minutes; turn occasionally.
On a plate, combine cornflakes, paprika, salt, black pepper and cayenne pepper. Remove chicken from the buttermilk, one piece at a time, allowing excess liquid to drain. Coat each piece with cornflake mixture, pressing mixture firmly to chicken. Stir the cornflake mixture with a fork to keep seasoning evenly mixed. Place chicken in prepared pan. Coat chicken with cooking spray.
Bake turning once, 40 to 45 minutes or until chicken is crisp, golden brown and juices run clear.
