Ingredients

  • 2 or 3 chicken breasts
  • 8 tortillas
  • 1/2 stick butter
  • 1/2 onion, chopped
  • 1 sm. green pepper, chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can Ro-Tel tomatoes/chillies, drained
  • 2 c. sharp Cheddar cheese, grated

Step 1

Cook chicken and debone and dice. Saute onion and pepper in butter. Add the 2 soups and drained Ro-Tel chillies. Simmer until well blended. While this simmers, cut the to quarters. Dip in hot grease. Spread some of the sau6ce in a baking dish. Layer chicken, tortillas and sauce (2 layers each). Top with the cheese. Bake, uncovered, at 325 degrees for 1 hour. Yield: 6 to 8 servings
