Ingredients
- 1-3/4 lbs chicken breasts chopped
- 1 Large onion chopped
- 1 crushed garlic clove
- 1/2 tsp ginger
- 1 tsp cinnamon
- 1 tsp turmeric
- 2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp chilli powder
- 1 cup chicken stock
- 2 Tbsp tomato paste
- 375 ml light evaporated milk
- 1 Tbsp cornflour

Step 1
1. Cook chicken until lightly brown then remove from pan
2. Cook onion for 5 minutes until softened
3. Add garli, ginger and spices to onion and cook for a minute or so
4. Return chicken to pan and add stock, tomato past and evaporated milk
5. Combine cornflour with a little water to make a smooth paste and add to the chicken mixture
6. Bring mixture to the boil. Reduce heat to low and simmer uncovered for 10 minutes or until the chicken is cooked through.
7. Serve with rice
