Ingredients
- 1 lb. cooked penne pasta
- 1 bottle TJ's Balsamic Vinagrette
- 1 container cherry tomatoes halved, drizzled with olive oil, sprinkled with salt and pepper and roasted for 15 mins in toaster oven
- 4 oz. Feta Cheese
- 1 can sliced olives
- 1 can artichoke hearts, chopped
- 1 bag baby spinach
- 1/2 red onion, rough chop
- 1 T. olive oil plus more for drizzling

Preparation
Step 1
Saute onion in 1 T. oil
add bag of spinach and wilt about 5 mins.
add artichoke hearts, add olives, when hot add tomatoes and pour small amount of dressing into pan to meld flavors.
Add cooked vegetables to hot pasta, add feta cheese and pour approximately half the bottle of dressing on top. Add salt and mix throughly.
