Ingredients

  • 4 Quarts sliced cucumbers (45 to 50 slices)
  • 1/2 cup salt
  • 2 quarts sliced onions
  • 1 quart vinegar
  • 4 cups sugar
  • 1 tablespoon celery seeds
  • 2 tablespoons mustard seeds
  • 1 tablespoon ginger
  • 1 teaspoon tumeric
  • 1/2 teaspoon white pepper

Preparation

Step 1

Gently stir salt into thinly sliced cucumbers. Cover with ice cubes and let stand 2 or 3 hours or until cucumbers are crisp and cold. Add more ice if it melts. Drain and add onions.

Combine remaining ingredients and bring to a boil quickly and boil 10 minutes. Add cucumbers and onion slices and bring to boiling point. Pack at once in hot jars and process in boiling water bath for 20 minutes.
