Ingredients
- Fish
- 1 fish fillet per person - trout, catfish or tilapia
- 3/4 tsp salt
- 1/2 tsp pepper
- 4 TB oil
- 1 pkg fish breading
- Salsa
- 16 halved plum tomatoes
- 1/2 small red onion
- 1 jar kalmata olives
- 4 cloves garlic
- 2 TB parsley
- 1 TB oil
- 4 TB capers
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 C feta

Preparation
Step 1
cut tomatoes in half
finely dice red onion
add olives, garlic, oil, capers, salt, pepper
place in fridge while preparing the rest of the meal
sprinkle fillets with salt & pepper
toss in breading
cook fillets in oil until it flakes easily
serve with salsa & feta
