Ingredients

  • 1 pkg 5mm Rice Noodles
  • 1 large chicken breast
  • 12 large uncooked shrimp
  • 1 egg, beaten
  • 2 green onions, sliced
  • 3 tbsp peanut oil
  • 1/4 cup chopped peanuts
  • 1/4 cup fresh cilantro, chopped
  • 1 1/2 cups bean sprouts
  • 3/4 cup pad thai sauce
  • 1 tbsp sambal olek
  • 2 tbsp sate chili oil
  • 2 tbsp sweet chili sauce
  • 1 lime, wedged
  • salt & pepper

Step 1

Peel and devein shrimp, place in small bowl with sweet chili sauce, juice of 1 lime wedge, salt & pepper.
Thinly slice chicken while partially frozen, place in small bowl with sate chili oil. Let marinate for 15 minutes. Meanwhile, place noodles in pan with boiling water until just tender. Rinse under cold water and drain well, toss with 1 tbsp peanut oil to separate. Heat 1/2 tbsp oil in wok, quickly scramble egg until just cooked, remove and set aside. Add 1 tbsp oil to wok, cook chicken until no longer pink, remove and set aside. Add shrimp to wok and cook until done, set aside.
Pour remaing oil to wok, add noodles and pad thai sauce. Add cooked egg, chicken and shrimp. Toss well until sauce coats noodles. Cook 3 minutes until heated through. Add bean sprouts and green onions, cook 1 minute longer. Serve, garnish with chopped peanuts, cilantro and lime wedges.
