Ingredients

  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried basil
  • 1 tsp oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp dried crushed rosemary
  • 2 tsp garlic powder
  • 4 (1 inch thick) center-cut, bone-in pork chops
  • 1/2 cup plus 2 T flour
  • 1/2 cup vegetable oil
  • 1/2 cup sliced onion
  • 1/2 cup green pepper
  • 1 1/2 cup chicken stock

Step 1

1. In a small bowl, combine all herbs and spices. Rub both sides of the pork chops and set aside for 20 minutes or cover and store overnight in the refrigerator.

2. Heat vegetable oil in skillet. Dredge chops in flour and cook 6-8 minutes on each side, until browned. Remove chops from the pan.

3. Pour off 2/3 of the oil. Add the sliced onion and green pepper and cook, stirring often, until the onion is transparent. Add 2 T of flour to the pan, cook for 1 minute. Stir in 1 1/2 cups chicken broth until smooth. Return the chops to the pan. Bring to a boil. Cover the pan, reduce heat and simmer for 45 minutes.

4. Serve chops with gravy over mashed potatoes or rice.
