Ingredients

  • 1 C broccoli florets
  • 1 onion, chopped, about 1/2 C
  • 2 T olive oil
  • 1 1/4 C cooked penne or desired pasta
  • 2 T chopped, fresh basil
  • 8 eggs, lightly beaten
  • 1/2 C shredded mozzarella cheese

Preparation

Step 1

1. Preheat oven to 400. In oven skillet cook broccolia nd onion in hot oil 5 min or til tender. Stir in penne, chicken, basil, and 1/4 t each salt and pepper.
2. Pour eggs over mixture in skillet. Cook over medium heat. As mixture sets, run spatula around edge of skillet, lifting egg mixture to uncooked portion flows underneath. COntinue cooking and lifting until egg mixture is almost set. Top with cheese. Bake 5 minutes or until set. Sprinkle with salt and pepper.
