Whole Wheat Sandwich Bread - Gluten Free

This is an excellent Whole Wheat Bread that is gluten free. You have the option of using gluten, or substituting All-Purpose Flour for the white wheat flour. (the AP flour has gluten in it). If you go gluten free, the bread will have a sweet nutty flavor and will be dense. The gluten will help the bread rise. Makes 2 loaves, 9x5 loaf pan

Ingredients

  • Makes 2 Loaves, 9x5 loaf pan
  • 3 cups White wheat flour OR All-Purpose flour*
  • 4 cups Whole wheat flour
  • 3 tsp Salt
  • 1/3 cup honey
  • 2 1/4 tsp yeast
  • 2 3/4 cups warm water (100-105 degrees)
  • 1/4 cup olive oil (Better quality oil will help to yield better flavor. I use Trader Joe's
  • Extra Virgin California Estate Olive Oil)
  • 1/4 cup vital wheat gluten **(optional)
  • Mix the flours in a separate bowl, with a whisk, to combine well.
  • 1 . Mix the water and the yeast in a large bowl. Allow to sit 2-3 minutes.
  • 2 . Gently stir in the Honey, Salt and Olive Oil
  • 3 . Slowly add the flour while you stir. Mix until all of the flour is incorporated and the dough begins to come off of the side of the bowl.
  • 4 . On a lightly floured surface, knead for 5 minutes, until the dough is smooth and elastic. You may need more flour to prevent the dough from becoming too sticky.
  • 5 . Place the dough in a large bowl. Grease plastic wrap (you can use cooking spray or olive oil, spread on with a paper towel). Cover the dough with the plastic wrap and allow dough to rise until doubled, about 70 minutes.
  • 6 . Punch the dough down and shape into loaves. Place loaves in lightly greased 9x5 loaf pans and cover each with greased plastic wrap.
  • 7 . Allow them to rise again for 30 min-1 hr (usually takes around 50 minutes). Then uncover and bake, at 375 degrees for 30-35 minutes, until the crust is lightly browned and bread sounds hollow when lightly tapped
  • Bread keeps best in an airtight bag, in the refrigerator. The bread freezes very well by wrapping tightly in plastic wrap and putting it in an airtight freezer-safe ziploc bag.
