Ingredients
- 1/2 lb ground beef
- 1 clove garlic, minced
- 1 small onion, chopped
- 1 sweet pepper, diced
- 1/2 tsp chili powder
- 1/2 tsp oregano
- 1/8 tsp hot pepper flakes
- salt & pepper to taste
- 1/2 cup water
- 1 tbsp lemon juice
- 1 cup cottage cheese
- 1 tbsp grated parmesan cheese
- 10 tortillas (6inch)
- 1/2 cup prepared salsa
- 1/2 cup grated mozzarella cheese

Preparation
Step 1
In a large skillet over medium heat cook beef, stirring to break up, for 5 minutes or until brown, pout off fat.
Add garlic, onion and pepper; cook until tender.
Stir in chili powder, oregano and hot pepper flakes, salt and pepper to taste, water and lemon juice.
Stir in cottage cheese and parmesan cheese.
Simmer for 5 minutes.
Place 1/4 cup of meat mixture across the centre of each tortilla. Roll up and place seam-side down in lightly greased shallow baking dish.
Top with salsa and mozzarella cheese.
Bake at 350 F oven for 10 minutes.
Serve with a dollop of sour cream
*Makes 10 enchiladas in 30 minutes.
