Ingredients
- 1 egg (room temp)
- 1/4 to 1/2 teaspoon fine salt
- 1/2 teaspoon dry mustard
- 2 pinches sugar (or substitute, but only if you like sweeter like Miracle Whip, omit if you like Hellmann's)
- 2 teaspoons fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1 1/4 cup safflower & 1/4 cup olive oil, combined

Preparation
Step 1
Combine first 6 ingredients in blender and start blending at lowest speed. Start adding the oil at a 'very slow drizzle' thru the opening in the lid until the liquid seems to thicken. Once it starts to thicken you can increase the oil flow a little bit, but still add it very slowly (this process should take 2 or 3 min - slower is key to success). Continue blending another 30 sec to 1 min after all of the oil is incorporated. Spoon into a pint canning jar and refrigerate. Enjoy!
