Hot Mexican Cornbread (Zach Suhre)

Ingredients

  • 1/2 cup flour
  • 2 cups corn meal
  • 2 cups buttermilk
  • 1 cup bacon grease
  • 1/4 lb bacon, crumbled
  • 4 eggs
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 2 large onions, chopped
  • 1/2 cup chopped jalopeno peppers
  • 1 can cream style corn
  • 1 lb velvetta cheese, cut in cubes

Preparation

Step 1

Mix ingredients in mixing bowl. Pour into greased baking dish. I believe this makes 2, 9 x 13 pans.
Bake at 350 for 1 hour.
