Ingredients
- 1 med eggplant, peel & cube (3c)
- 1 T parsley, fine chop
- 12 oz grated cheddar cheese
- 2 egg
- 1 med onion, chop
- 1 c cracker or Italian bread crumbs
- salt & pepper
- butter

Preparation
Step 1
Boil eggplant til tender (5-10 min). Drain. In buttered baking dish combine eggplant, parsley, cheese (save little for top), egg, onion, cracker. Sprinkle remain cheese, salt & pepper. Dot with butter.
Bake 350* 25 min
