Ingredients

  • 3 c Spelt flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 tsp cinnamon
  • 3 egg whites
  • 1 med apple, peeled and blended into a sauce
  • 2 c xylitol
  • 3 tsp vanilla
  • 2 c grated zucchini

Preparation

Step 1


1. Line 2 loaf pans with parchment paper & preheat oven to 325.

2. Sift flour, dry ingredients together in small bowl.

3. In larger bowl, beat eggs & other wet ingredients together until thoroughly mixed.

4. Add sifted ingredients to wet ingredients and mix well.

5. Fill loaf pans 1/2 - 3/4 of the way full.

6. Bake for 40-60 min at 325 or until a tester inserted in center comes out lean. Let cool 20 min.

This recipe makes 6 servings of grain ...
so 1/3 of a loaf = 1 grain
