Ingredients
- 6 no-boil lasagna sheets
- Extra-virgin olive oil
- l cup whole-milk ricotta
- 1/2 tsp salt
- 1 cup marinara sauce Pepper
- 6 Tbsp shredded or cubed mozzarella
- Fresh basil leaves

Preparation
Step 1
1. Preheat oven to 375°F- Lightly oil a standard muffin tin or coat with cooking spray.
2. In a large pot of boiling water, cook lasagna sheets 2 to 3 minutes until slightly softened. Drain well, then fit sheets into muffin cups.
3. Spoon 1 Tbsp ricotta cheese into each cup. Top each with 1 to 2 Tbsp marinara sauce and mozzarella. Drizzle with a little olive oil and season with salt and pepper.
4. Bake 10 to 12 minutes, until cheese has melted and pasta is cooked and crispy. Top with basil leaves. Serve immediately. Serves 6
