Ingredients
- Pork Roast 2-3 pounds
- frozen sweet corn 1 bag
- bell peppers 3
- sweet onion 2 lg
- cumin 1/2 tsp
- sour cream
- tortilla wraps
- jalepeno monterey jack cheese 2 C
- lime juice 2 TB
- kosher salt 1/4 tsp
- pepper 1/4 tsp
- garlic powder 1/4 tsp
- chili powder 1/4 tsp
- refried black beans 2 cans
- avocado 1/2 per person

Preparation
Step 1
Cook roast in crock pot a few hours until meat easily shreds apart
In large skillet cover the bottom with oil
add sliced onions until lightly browned
add corn, peppers, lime juice & cumin - cook until browned
On a sheet of foil place: tortilla, black bean spread, sour cream, cheese, vegetables, pork
roll & serve
serve avocado on side
mix salt, pepper, garlic, chili powder - sprinkle over avocado
