Dan's mom's recipe - he loves this!

26/09/15 - I've adjusted the sauce by adding more chicken broth and less cream than the original which works out well because it creates more sauce. Also, I added capers to the recipe but forgot them at the end - now Dan tells me his mother always used them!

Ingredients

  • 12 ounces boneless chicken breast, pounded very thin - I usually use turkey scallops from Tarini's
  • 1 tbsp. butter
  • 1 tbsp. EVOO
  • 1 clove garlic, finely minced or grated
  • 2 tbsp. sherry
  • 1 large lemon, juiced and zested, at least 2 tablespoons (it can't be TOO lemony for Dan)
  • 1/2 cup chicken broth
  • 2 tablespoons whipping cream
  • 1 tablespoon freshly chopped parsley
  • 2 tablespoons capers, rinsed and drained (recent addition)
  • OPTIONAL: (I prefer it without)
  • 1 tsp. butter
  • 2 tbsp. shredded parmigiano reggiano or pecorino romano

Preparation

Step 1

If not starting with the turkey scallops, pound chicken breast until thin but not falling apart. Salt and pepper and set aside.

Saute chicken in oil and butter over medium-high heat until just done, turning once. Remove to a plate or baking sheet and keep warm.

Increase heat to high, add garlic, sherry, chicken broth, lemon rind and lemon juice to pan and cook, stirring, until reduced and thickened - 5 - 10 minutes. Reduce heat and add cream slowly, stirring until incorporated and immediately remove from the heat. Add the capers and the parsley to the sauce and stir to combine.

Plate turkey and top with sauce.

OPTIONAL: Nap chicken with sauce, top each piece with a small pat of butter and sprinkle with grated parmesan and put under broiler to brown cheese.
