Ingredients
- 1 white cake mix (without pudding added)
- 1 1/3 cup water
- 2 egg whites
- 1 3 1/2 oz. can coconut, divided
- 1 can (9 oz)cream of coconut
- small can crushed pineapple

Preparation
Step 1
Preheat oven to 350 degrees. Grease and flour 2 8" round cake pans.
Combine cake mix, 1 cup coconut, water and egg whites; beat 2 minutes at high speed. Divide evenly in cake pans and bake until tests done. Cool in pans 10 minutes. Place waxed paper under wire racks and turn out cakes onto racks. Punch holes in top of cake with wooden skewers. Pour cream of coconut over cake while still warm. Let cool completely. Fill cake layers with buttercream mixed with coconut flakes and crushed pineapple. Ice with buttercream icing.
