Ingredients
- 2 x 1 lb. pkg. Pinquinto or Pinto Beans - rinsed & draiuned
- 1 1/2 quart cold water
- 2 x 16 oz. can whole tomatoes
- 1 ham hock (1 lb,) cracked
- 2 lg. white onions, chopped
- 2 c bottled salsa sauce
- 1/2 lb., salt pork - 4 pieces
- 2 t leaf oregano, crumbled
- 1/4 t crushed red pepper

Preparation
Step 1
1) Combine beans & water in large kettle. Soak overnight. Do not drain.
2) Add tomatoes and all ingredients. Bring to boil, cook for 5 min., simmer uncovered for 6 hrs. or until beans are tender. Add water as necessary to keep covered by 2".
Beans are best made a day ahead and refridgerated overnight.
