Ingredients
- 1 C flour
- 1 1/4 t cinnamon
- 1/2 t baking soda
- 1/2 t baking powder
- coarse salt
- 1 1/2 sticks butter, room temperature
- 1/2 c sugar
- 1/2 C brown sugar
- 1 large egg
- 1/2 t vanilla
- 1 C finely chopped zucchini
- 1 C rolled oats
- 1/2 C chopped toasted walnuts
- 8 oz cream cheese
- 1 C p. sugar

Preparation
Step 1
1. Preheat overn to 350. Sift flour, cinnamon, baking soda, baking powder and 1/4 t salt into a bowl. Beat 1 stick butter and sugars til fluffy. Beat in egg and vanilla.
2. Beat flour mixture into butter mixture. Mix in zucchini, oats and walnuts.
3. Refrigerate until firm, about 1 hour.
4. Using scoop, drop dough onto parchment-lined baking sheets, spacing about 2 inches apart. Bake until edges are golden, about 17 minutes. Let cool on wire rack.
5. Beat remaining 1/2 stick butter, cream cheese, and p. sugar together til smooth. Spread 1 T filling onto flat side of cookie and sandwich with another cookie. Repeat with remaining filling and cookies.
