Tomato Sauce

Ingredients
- ● 20 roma tomatoes, regular size (enough to fit 2 9x13 pans- tomatoes cut in half
- ● olive oil
- ● 1 tbsp fresh oregano, (or 2 tsp dried)
- ● 1 tbsp fresh thyme, (or 2 tsp dried)
- ● 1/2 tsp kosher salt
- ● black pepper, couple of grinds over tomatoes
- ● 2 tsp garlic , minced
- ● 1 cup onion, red, yellow, or white, doesn't matter
- ● 1 cup chardonnay, (or any cheap white wine)

Step 1
Preheat oven to 325℉
1. Slice tomatoes in half long-wise and scoop out pulp inside. Can use fingers to take out or use teaspoon.
2. Place in 2 9x13 pans with cut side up.
3. Spritz with olive oil.
4. Sprinkle with oregano and thyme. (Even distribution is not a must because it all ends up in the same sauce)
5. Sprinkle with salt
6. Put couple of grinds of pepper over tomatoes
7. Sprinkle garlic
8. Onion
9. Place into oven. Cook for 2 hours.
10. Turn oven up to 400℉ and cook for 1/2 hour.
11. Put tomatoes into food mill over a larger pan or bowl. Turn handle to get out inside.
12. Once tomatoes are done being ground out through food mill, and in pan, place on stove over medium heat
13. Pour in wine.
14. Bring to boil then drop to simmer. Simmer for 5 minutes.
15. This can be done without wine if needed.
