Ingredients

  • 8 oz wide egg noodles
  • 3 Tblsp butter
  • 2 Tblsp minced onion
  • 2 Tblsp flour
  • 1/2 teaspoon dry mustard
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 teaspoon Worcestershire sauce
  • dash of hot sauce, or 1/8 teaspoon cayenne pepper
  • 4 oz sharp cheddar, grated
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1/4 cup dried bread crumbs
  • Optional: 1/2 cup sliced black olives
  • Optional: minced parsley

Preparation

Step 1

Cook the noodles in lightly salted boiling water according to the package directions. Add 1 Tblsp of butter to the water. Drain.

Preheat the oven to 350 degrees. Butter an 8-cup baking dish or casserole.

Melt the remaining 2 Tblsp of butter and sauté the onion until transparent. Stir in the flour, dry mustard, salt, and cayenne pepper. Cook, stirring constantly, for 1 minute. Add the milk, all at once, and stir until the mixture thickens.

Add the Worcestershire sauce, hot sauce, and Cheddar cheese and stir until the cheese melts. Fold the sour cream and cottage cheese into the sauce and then fold in the hot cooked noodles.

Spoon into the buttered baking dish and top with bread crumbs. Bake 15 minutes.
