Ingredients

  • Bag of purchased broccoli slaw or zuchini noodles
  • Butternut squash 10 ounces cooked
  • Quarter of a red onion, diced
  • Bacon or pancetta
  • 2 cups of beef broth
  • Salt, cumin, paprika and juice of half a lemon

Preparation

Step 1

Boil the butternut squash in beef broth until soft and mash.

In separate pan, saute onion with bacon/pancetta.

Mix the onion and bacon mixture with the squash puree and spice with salt, cumin, paprika and juice of half a lemon.

Mix the broccoli slaw with olive oil and bake for 30 minutes at 350.

Pour the squash mixture onto the noodles, mix with fork and enjoy.
