Butternut Squash “Mac n’ Cheese”

Ingredients
- Bag of purchased broccoli slaw or zuchini noodles
- Butternut squash 10 ounces cooked
- Quarter of a red onion, diced
- Bacon or pancetta
- 2 cups of beef broth
- Salt, cumin, paprika and juice of half a lemon

Preparation
Step 1
Boil the butternut squash in beef broth until soft and mash.
In separate pan, saute onion with bacon/pancetta.
Mix the onion and bacon mixture with the squash puree and spice with salt, cumin, paprika and juice of half a lemon.
Mix the broccoli slaw with olive oil and bake for 30 minutes at 350.
Pour the squash mixture onto the noodles, mix with fork and enjoy.
