Ingredients
- 4-5 zucchini squash, peeled, sliced, and steamed (once cooled put them into a strainer and squeeze out as much liquid as possible)
- 1 large onion, sauteed
- 2 cloves of garlic, sauteed
- 3 eggs
- 2 TBSP potato starch
- 1 tsp salt

Step 1
Mix thoroughly and prepare the pan by putting a bit of oil in the bottom, sprinkle matzah meal, pour in the mixture, and sprinkle matzah meal on top. If you don't eat gebrochts, you can leave out the matzah meal.
I've also substituted a mixture of spinach and broccoli for the squash. If using, just defrost and add to the rest of the ingredients.
