Blue Cheese & Bacon Aioli - JS

Nothing enhances good food like great condiments, spreads & dips and this Blue Cheese & Bacon Aioli is a huge enhancer to many foods, especially steak sliders. If you are a blue cheese fan like me then this aioli is right down your alley; spread it on burgers, sliders and use it as a dip for crackers and kettle cooked chips too! I serve my recipe for this along with tri tip sliders at many parties that I’ve catered and I get so many rave compliments. It has a great tangy and smoky flavor and it is so simple to make…so next time you need a good recipe for a party, try this one! YUM CITY for sure!

Ingredients
- 1 cup of mayonnaise
- 1/2 teaspoon Herbs de Provence
- 1/4 teaspoon coarse ground black pepper
- 1 teaspoon Dijon mustard
- 1 teaspoon chopped garlic
- 1 cup of crumbled blue cheese
- 5 slices of cooked bacon and crumbled (about a 1/3 cup of crumbled bacon)

Preparation
Step 1
Mix all ingredients by hand so it remains chunky
In a mixing bowl, combine the mayo, Herbs de Province, pepper, Dijon mustard and garlic, mix well.
Stir in the blue cheese and bacon, serve right away or making it ahead of time by a couple of hours or overnight is best, it gives the bacon flavors a chance to blend into everything….
