STRAWBERRY - RHUBARB CRUMBLE

Ingredients
- 2 cups strawberries, sliced (fresh or frozen)
- 4 cups rhubarb, cut into 1/2" cubes (fresh or frozen)
- 1/2 cup sugar (add up to 1/4 cup more if fruit is tart)
- 3 tbsp. flour tsp vanilla extract
- 1 1/2 cups flour
- 1/2 cup brown sugar
- 1/2 tsp citrus zest
- 1/4 tsp nutmeg
- 1/2 cup unsalted butter, soft but not melted
- 1 tsp vanilla
- 1/2 cup chopped pecans, toasted
- 1 oz icing sugar (for dusting)

Preparation
Step 1
Toss the fruit with the sugar and add sugar if required. Add the 3 tbsp. flour and vanilla. Place in a 9" baking dish.
CRUMBLE
Combine the dry ingredients. Add the vanilla and butter and cut into till crumbly. Put over fruit - pat but do not press down.
Bake at 350 degrees for 35 minutes.
Top with vanilla sauce or ice cream.
