- 1 lg. peeled, halved shallots
- 6 T flour
- 4 cups turkey or chicken stock
- 2 bay leaves
- 3 sage sprigs

Step 1
Place roasting pan with turkey drippings over medium high heat; bring to a simmer. Add 1 cup Madeira; whisk for 1 minute. Strain into gravy separator. In large pan over medium heat, warm 6 T vegetable oil. Add 1 lb. shallots; cook, stirring occasionally, 10 - 15 minutes. Add 6 T flour; cook, stirring constantly, for 1 minute. Whisk in 4 cups turkey or chicken stock; add bay leaves and sage sprigs. Bring to a simmer over medium-high heat. Reduce heat to medium-low; simmer 8 - 10 minutes. Add strained pan drippings; season with salt and pepper. Discard bay leaves, sage and shallots.
