Tuscan Tomato and Grilled bread Salad

Ingredients
- 1/2 pound (one ace baguette) of crusty bread cut into 3/4 inch thick slices
- 1/4 cup plus 2 Tablespoons olive oil
- 3 large tomatos cut into 3/4 inch dice (about 4 cups)
- 1 cucumber, peeled and cut into 3/4 inch dice (we use English)
- 1/4 cup loosely packed fresh basil leaves torn into small pieces
- 1 tablespoon red-wine vinegar (balsamic vinegar)
- Course salt and fresh ground pepper

Preparation
Step 1
1. Heat a grill to medium. Brush the bread slices on both sides with the 2 Tablespoons of olive oil. Grill until nicely toasted on both sides. 3-4 minutes.
2. Let it cool and cut into bite size piecies.
3. In a large bowl, toss the bread cubes with the diced tomatos, cucumber and basil. Drizzle with the vinegar and the remaining 1/4 cup of oil and season with the salt and pepper.
4. Toss to combine and serve. (we found it was good to do this a little ahead to let the bread soften a little by absorbing the dressing and the juice from the tomatos.
Serves 4
