Ingredients
- 4 cucumbers
- 1/2 red bell pepper, diced small
- 1/2 yellow bell pepper, diced small
- 1/4 red onion, diced small
- 1/4 cup shredded carrots
- 1 mango diced
- 1 tablespoon minced fresh parsley
- 1/4 cup of your favorite salad dressing*
- or whisk equal parts rice wine vinegar olive oil and sugar (add any spices you like)

Preparation

Peel every other 1/2 inch or so of cucumber. Using a small melon-baller or teaspoon, scoop out the center of each cucumber slice, leaving the sides and bottom still intact. Spoon a heaping tablespoon of the chopped veggie/fruit mixture into each cucumber cup. To serve, drizzle with the dressing of your choice. Note: If serving these on a buffet, stir the dressing into the chopped vegetable mixture before stuffing it into the cucumber cups.
