- Ingredients:
- Short sticky white rice (1 1/2 cups)
- Unsweetened Coconut Milk (one 13.5 oz. canned)
- Water (1 cup)
- Thai Mangos (2 pieces, cubed)
- Salt (1 teaspoon)
- Cilantro (1 cup, stems removed)
- For chicken:
- Chicken Breast (1 lb., no skin, cubed)
- Curry Powder (1 tablespoon)
- Paprika (1 teaspoon)
- Garlic (4 cloves, minced)
- Vegetable oil

Preparation
Step 1
1. Cook Rice with mangoes.
2. Saute garlic in vegetable oil. Add chicken. When chicken is cooked add spices. Add to rice.
