Ingredients
- 1/2 c. unsalted margarine, softened
- 2 c. brown sugar
- 2 eggs
- 1 tsp. vanilla
- 2 1/4 c. flour
- 2 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 1/8 tsp. nutmeg
- 2 c. applesauce
- 1/2 c. raisins
- 1 c. chopped walnuts (optional)
- powdered sugar (optional)

Preparation
Step 1
Preheat oven to 350.
Grease and flour a loaf or tube pan.
Mix dry ingredients together and set aside.
With a mixer, cream the margarine in a large mixing bowl. Add the brown sugar and continue mixing. Add the eggs, 1 at a time and the vanilla; mix until well blended and fluffy.
Add the dry ingredients alternately with the applesauce. Fold in the raisins and nuts. Pour batter into prepared pan.
Bake until firm to the touch, about 45-55 minutes.
Let cool in the pan; then turn out. When completely cool, dust with powdered sugar.
