Ingredients
- 12 oz wild salmon fillet - divided into 2 portions
- 4 slices of lemon (cut these then juice the remaining lemon)
- Juice of 1 lemon
- 3 Tbsp dijon mustard (gluten-free)
- 2 tsp finely chopped fresh rosemary
- sea salt & black pepper to taste

Preparation
Step 1
1 Preheat your broiler.
2 Place salmon on a broiler-safe pan and top with a sprinkle of salt & pepper and slices of fresh lemon.
3 In a small bowl, blend lemon juice, dijon mustard and rosemary. Set aside.
4 When the salmon is opaque/lighter in color all the way through (or with a tiny bit of darkness still in the center), remove it from the oven and plate it with whatever vegetables you’d like. Asparagus is great with this sauce as well.
5 Drizzle sauce over fish and enjoy!
