Ingredients

  • salt and pepper
  • 1 box of bowtie pasta
  • 2 tablespoons olive oil
  • 1- 1oz pkg. of fajita seasoning
  • 4-5 small uncooked chicken breasts, chopped
  • 3 bell peppers, yellow, orange, red- chopped
  • lactose free whole milk

Preparation

Step 1

Cook pasta in salted water. Drain and set aside.

In a pan, warm oil. Toss chopped chicken with the fajita seasoning until coated in a bowl. Cook the chicken in the skillet, remove and set aside keeping warm. Drain about 1/2 of the juice from the pan.

Cook bell peppers in the skillet, stirring until tender. Pour in some of the milk, scraping up the bottom bit from the pan. Pour in enough to make a sauce but not too much- eyeball it. Stir until thickened. Season with salt and pepper.

Put pasta in a large bowl and top with chicken. Pour pepper sauce mixture over the noodles. Toss until everything is well coated. Add salt and pepper to taste. Add more milk if mixture is too dry.
