  • 1 1 1 bunch of kale
  • 1/4 1/4 1/4 c avocado oil
  • 1 1 1 c cubed, baked (or roasted) butternut squash
  • 1 1 1 c grapes, sliced into halves
  • 1/4 1/4 1/4 c red onion coarsely chopped
  • 1 1 1 c shredded rotisserie chicken
  • 1 1 1 c chopped parsley
  • Green Goddess Dressing (Bought from Trader Joe’s)
  • to and pepper to taste

Preparation

Step 1

Remove stems from kale by pulling from the bottom of stem to top of the leaf. Once all stems are removed, chop kale into smaller pieces. Place in large salad bowl and drizzle oil on top.

Massage oil and kale together with hands to make leaves tender. Add salt and a few cracks of pepper.

Sprinkle parsley, chicken, squash, grapes, and red onion evenly on top. Finally, drizzle with salad dressing and toss.
