Orange Maple Glazed Chicken with Thyme 1 Picture

Ingredients

  • 4 chicken breasts, bone-in and skin on
  • Salt and pepper
  • 1 tsp. (5 ml) butter
  • 1 tsp. (5 ml) olive oil
  • Zest and juice of 1 medium navel orange
  • 1/4 c. (50 ml) maple syrup
  • 1 tsp. (5 ml) Dijon mustard
  • 2 tsp. (10 ml) chopped fresh thyme
  • Fresh thyme sprigs for garnish
  • Orange slices for garnish

Preparation

Step 1

1. Season the chicken breasts with salt and pepper. Preheat oven to 375F (190C).

2. While the oven is preheating, heat the butter and olive oil in a medium, oven-safe, non-stick skillet over medium-high heat. Cook the chicken skin side down about 3 minutes until the skin is light golden.

3. Remove from heat and turn the chicken breasts over so the skin side is facing up.

4. In a small bowl, combine the orange juice, maple syrup and Dijon mustard. Whisk to combine. Add half of the orange zest.

6. Place the pan in the oven and bake for 25 to 35 minutes or until an instant-read thermometer reads 165F (75C). Be sure to baste the chicken every 10 minutes, making sure the glaze does not burn. (If the glaze starts to caramelize too quickly, add a spoonful of water.)

8. Garnish with fresh orange slices, a thyme sprig and remaining orange zest. Pour any remaining glaze over chicken.
