Ingredients

  • 3 unpeeled Russet potatoes
  • 4-6 cups oil for frying
  • 1 cup shredded cheddar cheese
  • 1 cup shredded monterey jack cheese
  • 3 slices cooked bacon
  • 1/3 cup ranch dressing

Step 1

Slice potatoes into wide rectangular slices 1/4 inch thick and 3/4 inch wide, (12-15 slices per potato). Keep immersed in water til ready to fry. Heat oil to 350 degrees. Dry potatoes on paper towels and fry for one minute. Remove from oil and drain til cool (about 10 minutes). When cool fry for 5 more minutes. Drain. Preheat oven to 375 degrees. Arrange on oven safe plate. Sprinkle with cheddar cheese and monterey jack cheese. Crumble cooked bacon and sprinkle over cheese. Bake 5 minutes til cheese has melted. Serve hot with ranch dressing.
