Ingredients

  • 1/2 cup olive oil
  • 1/2 cup balsamic vinegar
  • 1 1/2 tea. garlic powder
  • 1 1/2 tea., fresh basil, julienned
  • 1 1/2 tea. dried oregano
  • 1/2 cup red onion, roughly chopped
  • 3/4 tea. black peppercorns
  • 2 cups cooked elbow macaroni
  • 3 cups fresh sliced mushrooms
  • 10 cherry tomatoes, halved
  • 1 cup red bell peppers, roughly chopped into pieces
  • 1 cup green bell peppers, roughly chopped into pieces
  • 3/4 cup crumbled feta cheese
  • 1 (4 oz) can whole black olives
  • 3/4 cup salami, cut into strips

Step 1

In s large bowl, whisk together the olive oil, balsamic vinegar, garlic, basil, oregano, onion and black pepper. Next add cooked pasta, mushrooms, tomatoes, peppers, feta cheese, olives and salami. Toss until well coated. Cover and chill for 2-4 hours, the longer the better.
