Ingredients
- If using fresh herbs:
- I use 2 lbs. tomatoes for this and then can double/triple or whatever and just double/triple other ingredients.
- Ingredients
- Dip tomatoes in boiling water for a minute until peels crack and peel tomatoes then crush with potato masher
- Chop one large white onion
- Crush and dice three garlic cloves
- 3 T Tomato Paste
- Chop 3T fresh basil
- Chop 3T fresh parsley
- Chop 1T fresh oregano
- If using dried herbs:
- Use 2T Italian seasoning
- 2 T sugar
- 1/2 Cup red wine (can substitute 1/8 cup red wine vinegar)

Preparation
Step 1
Sauté onions until soft and translucent in 2T olive oil – I salt them so it goes quicker – 1 teaspoon
Add chopped garlic and sauté for 1 minute
Stir in tomato paste until combined with onions
Add red wine or vinegar and stir until combined
Add herbs and stir until combined
Add tomatoes and stir until combined
Add Sugar
Cook over medium heat until reduced by 1/3 or as thick as you want it!
