Ratner's Greek Salad
- 6 matjes herring
- 1 medium head cabbage; cored and shredded
- 1 green pepper; sliced
- 1 carrot; shredded
- 1 small onion; sliced
- 1 cup salad oil
- 3/4 cup white vinegar
- 1/2 teaspoon white pepper
- 1/4 cup Sugar
- 1 cup sour cream
- 1/2 cup Water
- Salt to taste
- tomato slices
Soak herring fillets in water tocover for several hours. Drain and dice
into 1/2 inch cubes. In a large bowl comine cabbage, green pepper, carrot,
and onion. Add herring.
In a small bowl combine the remaining ingredients except the salt, lettuce,
and tomatoes. Pour over salad and toss until well blended. Add salt.
Cover and chill for several hours or overnight. Serve on a bed of lettuce
garnished with sliced tomatoes.
