Ingredients

  • 1 1/2 lb. ground beef
  • 3/4 cup uncooked oatmeal
  • 1/2 cup tomato sauce
  • 1 beaten egg
  • 1 t. salt
  • 1/4 t. black pepper
  • 1 t. chili powder
  • 1/2 cup chopped onion

  • 3 T. butter or margarine
  • 3 T. flour
  • 1 t. salt
  • 1 1/2 cup milk
  • 1 1/2 lb. cheddar cheese
  • 1 (12 oz.) can Mexi-corn, drained
  • 1 small can chopped green chili, optional

Preparation

Step 1

Combine first 8 ingredients, shape into meatloaf form and put into a 2 qt. baking dish with lid. Bake at 350 for 30 minutes.

Meanwhile melt butter in pan add flour and cook for a minute, add milk and salt. Bring to boil and cook for 3 minutes or until starting to thicken. Add cheese, corn and green chili if using. Stir to mix till cheese is melted. Pour over meatloaf return to oven for another 30 minutes or until meatloaf is done and no longer pink. Let cool for 5 minutes.
