Ingredients

  • Marinade:
  • Zest and juice of 4 small oranges (about 2/3 cup)
  • 1/4 cup soy sauce
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. minced fresh ginger
  • 2 tsp. minced garlic
  • 2 tsp. hot chili-garlic sauce
  • 2 Skirt steaks, about 1 lb each

Step 1

To make the marinade: In a small bowl, whisk the marinade ingredients.

Cut each steak into 8-to10-inch pieces. Place steaks in large plastic bag with marinade and refrigerate 1-2 hours.

Allow steaks to stand at room temperature for 20-30 minutes before grilling. Discard marinade and pat steaks dry. Grill steaks over Direct High heat until cooked to desired doneness, 4-6 minutes for medium-rare, turning once. Remove from grill and let set 2-3 minutes. Cut crosswise into 1/4-inch slices. Serve warm.
