Vegetable Salad

From Sue Dunston. Excellent salad for a pot luck. She brings it every year to Angie and Bill's New Years Brunch.

Ingredients
- 1 can (14.5 oz.) French style green beans, drained
- 1 can white (11 oz.) shoepeg corn, drained
- 1 can (15 oz.) young tender peas, drained
- 1 jar diced pimientos, chopped
- 1 bunch green onion, chopped
- 1/2 cup green pepper
- 3/4 cup vinegar
- 1 cup sugar
- 1/2 cup oil
- 1/2 teaspoon pepper
- 1 teaspoon salt

Preparation
Step 1
Combine drained vegetables, green pepper and green onions. Mix vinegar, sugar and oil over low heat till sugar is dissolved. Pour over vegetables. Add salt and pepper. Mix well. Store in the refrigerator for 8 hours to blend flavors. Use a slotted spoon to transfer veggies over to a serving bowl and remove most of the liquid.
